Hey there! I haven’t forgotten about you all… I’m just still strugglin’ with jugglin’ the day job and the blogging. I’ve actually been cooking A LOT but, typical me, I haven’t documented any of it. So I may be making some duplicates soon just to have some things to post!
So one of my small time dreams came true recently when some people at work started a BOOK CLUB. God, I’m an old soul…
But anyway, this past month at our meeting, in lieu of having appetizers, we did a cookie swap. It was super fun and I was SO impressed with how the cookies all turned out – not one sugar or chocolate chip in the bunch. Everyone was adventurous and all of them were delicious!!
My addition to the bunch was kind of what you would call my “regular holiday cookie”, but that doesn’t make it any less delicious! I just went with a standby recipe to be sure it was good. I hate trying new things when I know other people will be taking it home to enjoy! (Just in case it doesn’t turn out!)
This recipe is SUPER easy, can be done really quickly, and doesn’t make a huge mess in the kitchen(!!). But I follow it exactly, every time I make it – and I’ve been making it for years – so I won’t even bother posting it. You can find the recipe here.
In our lineup we had: Persimmon cookies w/ orange glaze, Lemon Ricotta cookies, PB&J Cookies, Double Fudge cookies, Classic Gingerbread, Dark Chocolate dipped Coconut Macarons, and lots of other tasty treats!! I can’t even think of them all right now! It was overwhelming. Everything was seriously so, so good! The winner of our Cookie Swap Bakeoff was my old roommate Carissa who made these out. of. this. world. Baklava Cookie Bars. Holy Goodness. You need to make them ASAP. I think I ate seven just during that meeting. And Jeremy made some awesome, can’t-go-wrong, No Bake Nutella Cookies from Jessica over at The Novice Chef. Those are so easy and SO good! (I was so proud of him) 🙂
